Would you like to know how I make 15 breakfasts in 10 minutes?

Every time I upload a photo of my breakfast (I do change it up from time to time, but there is one which I put on repeat again and again), I get LOADS of questions about it.

Not only is it silly simple, but I cook up 15 breakfasts in 15 minutes. Seriously.

If you’ve been following me for a while you know how I love to work smarter. Harder is so last year, and wayyy over-rated if you ask me ? 🙂

Don’t they look delicious? And they are, as they are nutritious, versatile and filling too.

I’ll let you in on the secret now.

All they are, are eggs combined with any veggies you have on hand. That’s it!

No food waste

Use any veggies you’ve got in the fridge.

You can make it quicker

Next time you’re chopping veggies, chop a little extra with the intention of using them for my egg-veggie muffin recipe

Super versatile

Add cheese, salmon, herbs, ham…whatever tickles your fancy. Make smaller versions for the kiddies lunchbox too!

Go big (or go home ? )

Super hungry? Slice your muffin and pop over a slice of rye bread. My favourite way to indulge is to spread a little strawberry jam and add a slice of smoked ham or porchetta.
You can also pop your muffin inside of a wrap and add fresh salad.

How to prepare it

  1. Combine 15 eggs with the veggie of your choice in a bowl. Use one with a spout if possible.
  2. Pour the mixture into 15 muffin cases, or into a lined cake tin (you can cut them up instead)
  3. Bake for 15-20 minutes or until golden.

That’s how you make 15 breakfasts in 10 minutes. Isn’t it GENIUS?
