Quick dinners are KING. Having a few options which take close to nothing to prepare is essential to saving your sanity when it comes to dinnertime prep.
Hey, I’m not going to say goodbye to frozen pizza, I just wrote that to get your attention ☺️ Some days a frozen pizza right out of the box and into the oven serves me well. But I do not want to be eating that day in day out ?
These dinners require so little hands-on time you will be forever grateful I’m sharing.
Here goes…
1. The whole chicken
If you’ve got a slow cooker, you don’t even need to check on it! If not, it’s still as easy to put together. All you need are a few spices to rub in (think paprika & cayenne pepper, cumin, allspice & coriander, oregano, thyme & garlic…), and into the oven or slow cooker it goes. Peace out.
2. Stuffed veal or pork shoulder
You can get this ready-prepared from your local butcher. Super simple – pop into your oven and bake, or, my preferred method of cooking, cook it in the slow cooker.
3. Veggie omelette
Super way to get your 5-a-day! Also excellent to reduce food waste and use up any extra veg you have in the fridge. I always chop extra veg when I am preparing some for a recipe. The omelette is one way I incorporate more of the good stuff. We have this for lunch sometimes too.
4. Pasta with pesto
I always keep a tub of fresh, organic basil pesto in the fridge, but you can also make your own in minutes! Here are a few ones I’ve tried: basil, rocket & walnut, almond & broccoli and avocado & sundried tomato.
Having a few recipes like these up your sleeve will give you some extra breathing space because you do not need to spend hours and hours on dinner every week.
Think about what an impact these quick meals together with batch cooking could have on your day-to-day. Being smart about how to manage your time in the kitchen will give you access to more time to use as you please. That might mean more family time, more me-time, slower days, more time with your husband…or more time to simply be.
Try and at least opt for one of these quick dinners every week, and see for yourself.

August 30, 2019 10:09 amHi Nakita , we like to eat a whole chicken a d we cook it on the bbq !! It’s super delicious! I rub it with butter , and spices like paprika and onion , and charcoal chicken spices! The spices are of Schwartz! We leave the chicken on the bbq on a low heat for 1hr and 30 mins or even 2 hours ! I like to serve the chicken with salad and potatoes! !
