For years, breakfast was the meal that got pushed aside in our house. I’d either grab whatever was quickest, or skip breakfast altogether because there simply wasn’t time.

Everything changed when I started preparing a few breakfasts ahead.

It doesn’t have to be complicated. In fact, spending an extra 10 or 15 minutes once or twice a week can mean healthier breakfasts, less stress, and one less decision to make before you’ve even had your first coffee.

1. Banana & Oat Pancakes

One of my favourite make ahead breakfast ideas is making a triple batch of banana and oat pancakes. Admittedly, this takes a little longer than the other options, so sometimes I prep these on the weekend and freeze them. We tend to enjoy them during the weekend too, as a little treat.

Here’s the full recipe:

Ingredients

  • 2 eggs
  • 120g (1 cup) rolled oats or oat flour
  • 240g (1 cup) Greek yogurt (I use full fat)
  • 3 tbsp milk (or more if needed)
  • Optional toppings: I used banana, agave syrup and chia seeds

Method

  1. Blend rolled oats into a fine flour (unless using oat flour)
  2. In a large bowl, whisk Greek yogurt and eggs until smooth.
  3. Add the oat flour to the wet mixture. Whisk until lump-free.
  4. Add the milk to thin the batter. It should be thick but pourable (add more if needed).
  5. Heat a greased pan over medium heat. Spoon batter into the pan, flatten slightly, and cook until bubbles appear and edges are golden.
  6. Flip pancakes carefully and cook the other side until golden. Repeat with the remaining batter.
  7. Add your toppings and enjoy!

2. Boiled Eggs

Sometimes simple really is best.

Boil a batch of eggs at the start of the week and keep them in the fridge ready to grab.

They’re great on their own, but you can also pair them with fruit, vegetables, crackers or a handful of nuts for a quick breakfast that keeps you full much longer than toast alone.

3. Toast (prep your toast toppings)

Toast doesn’t have to be boring.
If I’m already slicing tomatoes, I’ll slice enough for the next couple of days and store them in an airtight container in the fridge. Having toppings ready means breakfast takes less than a minute to put together.

Some of my favourites are:

  • Cottage cheese and tomatoes
  • Hummus and cucumber
  • Crumbled feta and tomatoes
  • Mashed white beans with garlic and olive oil
  • Boiled eggs with a sprinkle of black pepper

Little bits of prep like this make busy mornings feel surprisingly easy.

4. Greek Yoghurt Pots

Greek yoghurt pots are perfect when you need breakfast ready to grab and go.

Layer Greek yoghurt with fresh fruit, then simply add granola just before eating so it stays crunchy. Make a few jars at once and you’ll have breakfast sorted for several mornings with almost no effort.

5. Chia Pudding

I’ve completely changed my mind about chia pudding.

Once I found a combination I actually enjoyed, it quickly became one of my favourite make ahead breakfast ideas.

Simply mix chia seeds with Greek yoghurt and leave it in the fridge overnight. In the morning, top with fresh berries, sliced banana or a drizzle of honey.

It only takes a couple of minutes to prepare several jars at once, so breakfast is already waiting for you when the day begins.

The biggest benefit isn’t really the food. It’s removing one more decision from your morning.

When breakfast is already prepared, you’re far less likely to skip it, settle for something less satisfying, or start the day feeling rushed.
